CHIANINA BEEF TARTARE WITH ONION, CAPERS AND BREAD TOAST
for 4 persons
Ingredients
250 gr beef fillet
50 gr pickled gherkins, minced
50 gr pickled onions, minced
50 gr pickled capers, minced
2 egg yolks
½ lemon
1 cl balsamic vinegar
1 sprig parsley
4 slices bread
salt and pepper
San Felice Olio Extra Vergine d’Oliva
Procedure
Chop up beef with a knife. In a bowl, mix the salt, oil, yolks, and lemon juice. Then add the gherkins, onions, and capers, chopped parsley, and mix everything together. In the meantime, toast the bread slices, then arrange the beef on them dressed with the mixture, using a dough mould. Garnish with gherkins, onions, and capers on the left, plus a drizzle of balsamic vinegar.
