Il Velato
Our Velato is released just a few days after the harvest, the olives always hand-gathered with traditional “olive rakes.”
Since it is bottled with no filtration, it displays a slightly cloudy, or velato, appearance; it thus appeals to those aficionados of herbaceous and bitterish palates and to the powerful fragrance of new oil. A small amount of the moraiolo variety has been added to lessen the pungency characteristic of the frantoio.
