San Felice

 

San Felice, with about 17,000 olive trees, is one of the major producers of the prestigious Olio Extravergine di Oliva DOP del Chianti Classico.

Its varietal repertoire consists of three olive varieties. The principal olive is the frantoio (with a high percentage of the correggiolo biotype), the variety that gives Tuscan oils their most valued qualities: that intense green hue, fragrances that are fruity and pungent, a full-flavoured palate, and a finish with a bitterish “bite.” Smaller amounts of moraiolo and leccino are used as well.

This Chianti Classico olive oil appears a brilliant, elegant green, that with age shades into a lovely gold-yellow. The nose is redolent of fresh garden greens, artichoke, and lettuce, while the palate shows crisp and fragrant, exhibiting pungent notes of rosemary, sage, and mint, building an intriguing mosaic of piquant and pleasantly bitterish impressions.
